Ingredients
- 125g soft butter
- 300g best-quality dark chocolate (minimum 70% cocoa)
- 3 generous tablespoons golden syrup
- 200g digestive biscuits
- 100g mini marshmallows
- icing sugar for dusting later
Method
- Melt the butter, chocolate and golden syrup in a saucepan. Scoop out about a quarter of the mixture and set it aside.
- Put the biscuits into a bag and then bash them up with a rolling pin or else blend them in the blender for a few seconds- you want there to be chunks as well as crumbs so dont bash them or blend them too much!
- Fold the bashed up biscuits into the melted chocolate mixture in the saucepan and add the marshmallows.
- Tip your mixture into a tray (24cm square) and press it down until flat on top. Pour the set aside quarter of melted chocolate mixture over the top just to make it nicer looking and flatter.
- Refrigerate until fully set, could take 2-4 hours.
- Cut into squares (as many as you like depending on what size you want them) and dust with icing sugar.
- Optional- If you want throw a few nuts (like pecans or almonds) or even a few rice crispies into the mixture with the biscuits.
